Description:

Nutmeg is the inner kernel of the fruit from an Evergreen Tree native to Moluccas, or the Spice Islands. This oval shaped fruit is about one inch long and dark beige in color. The fruit is split open to reveal the Nutmeg seed that is encased in a bright lacy covering called Mace. The oval shaped seed has a sweet, spicy flavor resembling that of Cardamom, Cinnamon, and Cloves. Nutmeg blends well with other spices and is found in many ethnic cuisines. Nutmeg is usually associated with sweet, spicy dishes such as pies, puddings, custards, cookies and spice cakes. In small dosages nutmeg can reduce flatulence, aid digestion, improve the appetite and treat diarrhea, vomiting and nausea. Ground Nutmeg is easier to use when cooking than whole Nutmeg.

Because the flavor of Nutmeg diminishes when heated it should be added toward the end of the cooking process. Nutmeg is great in puddings, chutneys, breads, ketchup, eggnog, spiced wine, muffins, apple pie and cookies. Nutmeg is also wonderful in savory dishes such as pasta, sauces, steamed spinach, braised vegetables, dumplings, and roast meats.

Recommended Preparation Instructions:

No preparation is needed. Just add to recipe. Nutmeg should be added toward the end of the cooking process because its flavor diminishes when heated.
