New Mexico Chile Powder (40 mesh) is 100% pure and is made from grinding whole, New Mexico Chiles, seeds and pod both. New Mexico Chiles are popular in Red Mexican or Southwestern cooking. The New Mexico Chile has a thin flesh with an earthy chile flavor and wild cherry undertones! Dark brown with a touch of maroon in color, the New Mexico Chile is about 5 – 7 inches high and about 1½ inches wide. Elongated and tapered, they are the dried form of the Red Anaheim Pepper. Also referred to as the California Chile or Chile Colorado. Mildly hot, this chili is used to make Ristras. Scoville heat units are 750 - 1,250.

New Mexico Chile Powder can be added to Chicken enchiladas, posole, Mexican chile sandwiches and red chili. Mildly hot, this blend is subtle enough to use in American or Southwest cooking. Add to sauces, salsa, rice dishes, tamales, stews and soups. Savory in fish dishes and in stir-fry. Use this as a base to make your own chili spice. Rub onto chicken or pork before grilling, sprinkle with lemon juice and butter onto fish before baking. Dust on popcorn with garlic powder and Parmesan cheese for a late night snack.

Recommended Preparation Instructions:

Chile Powders require no preparation. Add directly to recipes when a boost of flavor and heat are desired.

Substitute 1 tbs. of New Mexico Powder when a recipe calls for 1 whole, dried Anaheim chile or New Mexico chile.
