EUROPEAN SOLDIER BEANS
Description:
These Heirloom beans resemble a tiny, toy 18th century soldier due to their long white body with reddish “eye” markings earning them their name, European Soldier bean. Known as a baking bean, they are also known as Red Eye beans and can replace almost any bean from the white bean family in recipes. Soldier beans are about 3/4 inch long with a mild flavor and firm texture. In France, this bean is known as 'Haricot St-Esprit à Oeil Rouge' or 'Holy Spirit in Red Eye' bean. European Soldier beans are grown in the cooler climates of the northern U.S.
Suggested Use:
The European Soldier bean is a tasty and attractive addition to soups, salads and casseroles. Make a savory dish of maple-baked beans or white bean chowder, or mix with diced ham and vinaigrette and serve over lettuce as a refreshing cold summer salad. One cup dry yields 2 ½ cups cooked.
Substitutes: Trout and Great Northern beans.
