BLACK BEANS, FERMENTED
Description:
Fermented Black Beans are Black Soy Beans that are cooked and then fermented in their cooking brine. After cooking, they are salted and dried in the sun. Since they are salty, it is best to soak then before using. Fermented Black Beans are used in many Asian cuisines and are treasured for their soft yet firm texture.
Suggested Use:
Soak in water to expel the excess salt, and then press lightly to release the fermented flavor. Prepare and cook as desired. Finely chop Fermented Black Beans and add to fish or meat dishes. Bean paste can be made from these fermented beans and used as a sauce for steamed broccoli or stir-fry. Beef and Peppers in Black Bean Sauce, Glazed Chicken in Black Bean Sauce, Lobster Cantonese, Mapo Tofu, Spareribs with Black Bean Sauce, and Stir Fried Clams with Black Bean Sauce are just a few recipes you can make with these beans.
