Description:

This relative of the Kidney Bean is also known as Dot-Eye bean, Molasses-Face bean, Yellow-Eyed China bean and Butterscotch Calypso bean. Yellow Eye Stueben beans are not really yellow in color but more of an ivory color with a spot of mustard color radiating from their inner seam. The very center of the inner seam has a white center encircled by a light brown ring, giving it the appearance of an eye. Yellow Eye Stueben beans are one of the best baking beans with a mild flavor and mealy, firm texture. Yellow Eye Stueben beans keep their color and shape after cooking. Commonly grown in Michigan, Idaho, and California, this bean is used in soups, stews, salads, and mixed vegetables. Popular for making Maine baked beans.

Yellow Eye Stueben with its mild flavor can be used in dishes where appearance is striking and flavor is subtle. Savory in dishes where absorption of flavors is desired which makes it perfect for using in baked dishes. Delicious when cooked with Portabella or Black Trumpet mushrooms.

Substitutions: Navy or Great Northern beans.

Recommended Preparation Instructions: 

Soak overnight in plenty of water. Drain, rinse and place in a large pot that has a lid. Add enough water to cover beans by 1 inch. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 60-90 minutes until tender. 

One cup dry yields 3 cups cooked.
