Great Northern Beans are a wonderful additions to barbecued beans, bean salads, cabbage stews, sausage casserole, vegetable chowder, corn soup, and bean stew. They cook in approximately 1 hour. One cup dry yields 2 ½ cups cooked.
Substitutes: Navy, Cannellini, Flageolets, or Lima beans.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 45 minutes until tender. This bean produces foam, so skim the water regularly while cooking.
