GREAT NORTHERN BEANS
Description:
Great Northern Beans are known far and wide as the bean most often used in cassoulets and stews. This white, oval shaped, medium size bean is about twice the size of Navy beans with a mild flavor and mealy texture. Related to the Kidney bean and part of the white bean family, these beans were grown in the Americas before Europeans arrived. They are great in baked beans, casseroles and anywhere a mild flavored bean is called for.
Suggested Use:
Great Northern Beans are a wonderful additions to barbecued beans, bean salads, cabbage stews, sausage casserole, vegetable chowder, corn soup, and bean stew. They cook in approximately 1 hour. One cup dry yields 2 ½ cups cooked.
Substitutes: Navy, Cannellini, Flageolets, or Lima beans.
