Cooking Calypso Beans is large quantities of water helps keep them from losing their distinctive coloring. Calypso Beans can be combined with rice to make a unique stuffing for vegetables. Excellent in Poblano stew or bean salad with mango and citrus. Soak overnight; 1 cup dry equals 2 ¼ cups cooked.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with plenty of fresh water (more water preserves coloring of uniquely colored beans). Bring to a boil for 3 minutes, reduce heat, and simmer, covered, for 30-40 minutes or until tender.
One cup dry yields 2-1/2 cups cooked.
