Recommended Preparation Instructions:
Soak beans in lots of cold water overnight, or use the quick-soak method by placing beans in a pot and adding water to cover by a few inches. Bring to a boil over high heat, then remove from the heat and let soak for one hour. Drain and rinse either overnight-soaked or quick-soaked beans. Return to pot and cover with several inches of cold water and a pinch of salt. Bring to a boil over high heat, then reduce heat to medium and simmer for 45-50 minutes until tender.
One cup dry yields 2½ cups cooked.
