There are many different beliefs regarding the difference between Brown and Morita Chipotles. One understanding is that the Brown Chipotle is the green Jalapeno and the Morita is the red, fully mature Chipotle. The Jalapeno is first smoked for an extended period of time and then dried, giving it a unique smoky flavor, which is popular in many Southwestern dishes. These peppers run about 1 ½ -3 inches in length and are a tan to light brown color. Approx Scoville heat units 7,000-18,000.
