White Wood Ear Mushrooms are virtually tasteless, have translucent, off-white flesh that is gelatinous, but firm, and it looks like a spongy flower. Used mostly for its gelatinous texture, it does take on the flavor of the broth or seasoning in the dish. Mainly used in traditional Chinese sweet dishes. Its supposed medicinal benefits, namely anti-inflammatory and anti-tumor, make it commonly used in Chinese soups cooked for soothing purposes like nourishing the bodies, healing dry coughs and clearing heat in the lungs. White Wood Ear Mushrooms are also known as snow ear fungus, silver ear fungus, white wood ear fungus and white tremella mushroom.

In Chinese cuisine, it is traditionally used in sweet dishes. Since it is mostly tasteless and able to absorb flavor, it is valued for its gelatinous texture. Most commonly, it is used to make a dessert soup called luk mei, with jujubes, dried longans and other ingredients. It is also used in drinks, as an ice cream, in a sweet soup or with chicken in a savory soup and vegetarian stir-frys.

Recommended Preparation Instructions:

Must be soaked, trimmed and washed thoroughly. Cover with a generous amount of water, at least 3-4 times its size. Soak for 30-60 minutes until its body becomes gelatinously soft. Trim off hard bottom, tear the fungus into small pieces resembling petals, wash thoroughly, drain dry and gently squeeze moisture. It double in size and turns from yellowish-white to semi-transparent.
