Chiles
Chile Powder
SERRANO, SMOKED, POWDER
Description:
The Serrano [seh-RRAH-noh] Chile is a hot savory Chile that is also known as “chile seco”. Small, thin, about 1 1/2" long and slightly pointed, this chile is known for its hot, clean flavor with notes of citrus. As it matures, the Serrano turns to a scarlet red or yellowish-orange color. Thin skinned, they don’t need to be steamed or peeled before using. The Dried Serrano is primarily used in sauces but is well received in salsas, stir-fry, and guacamole and with seafood. Popular in Asian dishes the Serrano blends well with cilantro, garlic, lime, mint, and onion. Scoville heat units are 8,000 to 22,000. Serrano Powder is made by grinding whole Serrano Chiles.
Suggested Use:
Add the serrano to any sauce in which an authentic, hot chile flavoring is desired.
