NEW MEXICO CHILE
Description:
New Mexico Chiles are popular in Red Mexican or Southwestern cooking. The New Mexico Chile has a thin flesh with an earthy chile flavor and wild cherry undertones! Dark brown with a touch of maroon in color, the New Mexico Chile is about 5 – 7 inches high and about 1 ½ inches wide. Elongated and tapered, they are the dried form of the Red Anaheim Pepper. Also referred to as the California Chile or Chile Colorado. Mildly hot, this chili is used to make Ristras. Scoville heat units are 8,000 - 12,000.
Suggested Use:
New Mexico Chiles are a favorite ingredient in Chicken enchiladas, posole, Mexican chile sandwiches and red chili. Mildly hot and very popular in Southwest cooking, try them in sauces, salsa, rice dishes, tamales, stews and soups. Savory in fish dishes and in stir-fry. Use the powdered form of this wonderful chili to make your own chili spice.
