CHIPOTLE IN ADOBO

Description:

Chipotles (chee-POT-lays) are exactly what their name implies, “smoked chiles”.  Chipotles are smoked Jalapeno peppers and Chipotles date back to what is now known as Mexico City, prior to the Aztec civilization.  It is said that the Aztecs smoked these thick fleshed chiles because they were difficult to dry and prone to rot. The smoking process gives these chiles a unique hot-smoky flavor, which is popular in many Southwestern dishes.  Today, Chipotles are used widely throughout Mexico as well as in the U.S.  Chipotles have a smoky-sweet flavor and are about 1 ½ to 3 inches in length with a rich reddish brown color.  Chipotle in Adobo sauce is a canned product made of Chipotle chiles, tomato, vinegar, vegetables, oil and spices.  This tomato-based sauce is called Adobo.  The Chipotle is a little above midrange for heat intensity.

Suggested Use:

Chipotle in Adobo is a wonderful addition to many recipes; Mesquite-smoked grilled turkey with Adobo sauce, salmon burritos with Chipotle cream, chicken and pork Adobo, raspberry-Chipotle pork cutlets, Chipotle bloody mary, Adobo mayo for sandwiches, tamale pie or combine with shredded pork, beef or chicken to fill enchiladas or tacos.  Use Chipotle in Adobo combined with lemonade and other spices for a zesty marinade.
