Description:
The Puya Chile is quite similar in appearance and flavor as the Guajillo Chili but with a more intense heat. The Puya Chile is a Mexican Indian chile that is slender, about 3 – 4 inches long with a sharp and intense flavor. Delicious in salsas and stews because of its fruity flavor, the Puya Chile can be used with the Guajillo to make the dish more "picante”. Scoville heat units are 5,000 to 8,000.
Suggested Use:
Add the Puya Chile directly to recipes that will cook for at least ten minutes or more or soak in hot water for 10 minutes to rehydrate. To release more flavor, roast in a 250 degree oven for 3-4 minutes. Use the Puya Chile in any recipe requiring a fruity flavor and intense heat.
