PASILLA, GRANULATED
Description:
The Pasilla (Pa-see-ya) Negro is a traditional chile used in both Southwestern and American dishes. Long, black, slightly bent and wrinkled, this flat chile measures about 6 inches long and 1 ½ inches wide. Richly colored like an Eggplant or a Raisin, this thin-fleshed chile has an offbeat berry flavor with herbaceous tones. The word Pasilla comes from the word "PASA" meaning "little raisin" in Spanish. Pasilla Negros, combined with the Ancho and Guajillo, form the "holy trinity" of chiles used to prepare the traditional mole sauces. In California the Ancho Chile is called Pasilla. Scoville heat units are 1,000-2,000. Our granulated Pasilla Negro is chopped pieces of the whole Pasilla Negro Chile.
Suggested Use:
Use Pasilla Negro in traditional Mexican recipes. Be adventurous, add Pasilla Negro to meat loaf, beef stew or corn chowder. This chile will liven up everyday cream sauce or egg dishes. Combine Pasilla Negro Chiles with your favorite spices for a tangy heat. Use the powdered form of this wonderful chili to make your own chili spice. Rub onto chicken or pork before grilling, sprinkle with lemon juice and butter onto fish before baking.
