Red Corn has long been a symbol of religious importance to the American Indians of the southwest, Red Corn represents the movement of the sun to the West; the place that ensures long life and the direction our spirits must travel when we cross over. Ground Posole is used for many products including Masa Harina, cornmeal, cornstarch and corn flour. Dried corn kernels are ground into a fine, medium or coarse texture, most commonly known is the yellow or white cornmeal found in most markets today. Specialty Cornmeal comes in a limited amount of forms, usually Blue or Red Cornmeal. Cornmeal is used to produce other types of corn products such as corn chips, corn bread, tortillas, and porridge. Red Corn is more nutritious than white or yellow corn since it contains twenty percent more protein.
