Limes are second only to Lemons as a flavoring agent for foods and drinks and a scenting agent in products for home and industrial use. Limes are the smallest members of the true citrus family that flourishes in tropical and sub-tropical climates. Limes are famous for their use in the prevention of Scurvy, the “plague of sailors”. Lime Peel contains the zest of Lime and is used to enhance meats, vegetables, soups, beverages and pastries. Limes contain a more acidic taste than lemons but can be used as a variation in recipes calling for Lemon products.
