RYE BERRIES

Description:
Rye is a grass and is closely related to barley and wheat.  Recognized in the past as a weed, it was not domesticated until the 4th Century B.C.  Rye Berries are the grain of Rye with only the hull removed.    Rye Berries are native to Southwest Asia.  In Europe, Rye is now a very popular bread grain even though Rye contains fragile gluten properties, which make it difficult to bake in breads.  Rye berries are used for flour, rye bread, rye beer, some whiskies and vodkas and as animal fodder.  You may eat Rye Berries boiled or rolled, similar to oats.  Rye Berries are high in amino acids and B Vitamins and are very rich in fiber.  They are firm and chewy with a mild walnut flavor.

Suggested Use:
Substitute Rye Berries for Wheat Berries in your favorite recipes.  Rye Berries can be using in soups, breads, stews, stuffing, pilafs and casseroles.  Try a variety of recipes such as; honey-sweet Rye Berry salad with apricots, Rye Berry salad with orange vinaigrette, Rye Berry bread, red cabbage and rye berries and peppered Rye Berry loaf.
