Semolina (she-muh-LEE-nuh) is the roughly milled endosperm of Durum Wheat. The endosperm contains the gluten protein that gives hard wheat its unique properties for making good pasta. Semolina is most commonly used in the manufacturing of pasta. It is high in protein and gluten, which are necessary components for pasta making. Semolina flour is occasionally used for gnocchi, various breads and other baked goods. Our Semolina is #1 grade, first press, unbleached.
