Description:
Barley has been cultivated for food for centuries and is the 3rd ranking cereal grain, ranking behind wheat and rice. Hulless Barley is bred and selected for its high quality and amount of protein, lysine, soluble fiber and other components. The low glycemic index makes this an excellent whole grain food for diabetics and those with high blood pressure or doing strenuous work or athletics. High in protein at 15% or better, excellent starch and a highly recommended fiber. The soluble fiber contains the highest level of beta glucans of any cereal grain and is recommended for lowering cholesterol.
Gluten: Barley has a different type of gluten than wheat. People who are allergic to wheat or sensitive to wheat gluten may or may not be able to tolerate barley. Those with gluten sensitivity should test small amounts for possible adverse reactions.
Exellent cooked whole; no processing needed, or rolled into flakes and milled into grits or flour. Use in bread, pancake mixes, soups and stews.
