Use Freekeh in place of rice, pasta spelt or farro. Delicious in soups, salads, casseroles, risotto, pilafs, stuffings, puddings and pastries. Freekeh may also be used as a substitute for oatmeal. For a creative side dish, toss chilled Freekeh with fresh greens and dried fruit. In Lebanon, its often served topped with chicken and toasted pine nuts. For added flavor, use chicken stock when boiling. Substitute for rice and make an exciting stir-fry dish.
Recommended Preparation Instructions:
In a large saucepan, add 2 cups of water (or chicken broth), 1 cup of Freekeh, pinch of salt (only if using water) and 1 Tbs olive oil (optional). Bring to boil, stirring occasionally. Cover the saucepan with a tightly fitting lid. Lower heat and simmer for 40-45 minutes. Ensure all water is absorbed and grains are tender before serving.
One cup dry yields 2 cups cooked.
