Description:

Wheat is one of the most well-known and nutritious grains.  One of the world's largest cereal-grass crops, Wheat is second only to rice.  Unlike other cereal grains, Wheat contains a relatively high amount of gluten, the protein that provides the elasticity necessary for excellent breadmaking.  There are well over 30,000 varieties of Wheat, but the three major types are Hard Wheat, Soft Wheat and Durum Wheat.  The unprocessed Wheat kernel is commonly known as a Wheat Berry.  The Wheat Berry is made up of three parts, bran, germ and endosperm.   Wheat Berries are husked and this form of hard Red Wheat Berries is the least processed and has the highest gluten content.  Grown in the coldest parts of the North and Northwest U.S., Hard Red Wheat Berries absorb liquid well making it the ideal grain for bread. Wheat Berries are low in calories and are a nutritious source of protein, fiber, Vitamin B-6 and zinc.

Suggested Use:
Grind Wheat then add to bread for a hearty texture or add whole after soaking. Nutritious and tasty, Wheat Berries may be used in tabbouleh, as meat extenders or bean substitutes or even as a replacement for noodles. Wheat Berries can be added to casseroles, soups, stews, muffins or pancake and waffle batter.  Wheat Berry Salad with your favorite dried fruit or flavorful Wheat Berry Tapanade and Wheat Berry Black Bean Chili are just a few of the delicious recipes you can make with this hearty grain!
