Wheat is one of the most well-known and nutritious grains. One of the world's largest cereal-grass crops, Wheat is second only to rice. Unlike other cereal grains, Wheat contains a relatively high amount of gluten, the protein that provides the elasticity necessary for excellent bread making. There are well over 30,000 varieties of Wheat, but the three major types are Hard Wheat, Soft Wheat and Durum Wheat. The unprocessed Wheat kernel is commonly known as a Wheat Berry. The Wheat Berry is made up of three parts, bran, germ and endosperm. Wheat Berries are husked and this form of hard Red Wheat Berries is the least processed and has the highest gluten content. Grown in the coldest parts of the North and Northwest U.S., hard Red Wheat Berries absorb liquid well making them the ideal grain for bread. Wheat Berries are low in calories and are a nutritious source of protein, fiber, Vitamin B-6 and zinc.

Recommended Preparation Instructions:
Soak wheat berries overnight. Drain, cover with 3½ cups of water or stock and bring to a boil. Reduce heat and simmer for 50 minutes. Drain if needed, fluff with a fork. For nuttier flavor, toast before soaking.
One cup dry yields 3 cups cooked.
Wheat Berries are husked, whole Wheat Kernels surrounded by the Bran of the Wheat. This form of hard Red Wheat Berries is the least processed and has the highest gluten content.
