Thought to relieve headaches and clear the mind, this attractive flower has been used in perfumes and oils. One of the common ingredients in Herbs de Provence, Lavender can be used in teas, dressings, and light marinades. Lavender can be added to wreaths or used in dried flower arrangements, adding both color and fragrance. Lavender is great for making potpourri and when mixed with oatmeal and rosemary it can be used as a soothing bath blend. Rub on wild game or fowl prior to roasting. Add Lavender to sugar and seal in an airtight container for several weeks to create your own flavored sugar to add to cakes, custards, or teas. Decorate champagne, chocolate cake, sorbets, or ice creams with a sprinkle of Lavender.
