They are most often used in soups and stir fry’s where they add exotic texture and flavor. Use as a complement to almost any salad, Enokis will add a bit of crispness and a subtle radish flavor similar to nasturtium leaves and flowers. Toss some into soup during the last few minutes of simmering, or drop them into stir-fried dishes just before serving.
Recommended Preparation Instructions:
Rinse mushrooms, cover with boiling water and let rehydrate for 10 minutes or until desired texture is achieved. Drain and cut off any excessive tough stem that may still be attached at the bottom. Enoki tend to have a clump at the bottom of the stem and it is best to trim the mushrooms where they begin to branch off so that each stem is separated from the base.
