Description:
Woodear mushrooms, also known as Black Fungus or Tree Ear, are cultivated all over the world but grown for the commercial dry market almost exclusively in China. Woodear look like ears growing out of trees, hence their name. This mushroom is used often in Asian cooking and is easily mistaken for the Cloud Ear mushroom. Woodear mushrooms are a flattened plate-like cap that spans about 1 to 8 inches across with a wave of convoluted curls and crevices, similar to an ear. They are brownish tan in color with a black exterior and have a firm skin, springy texture, which becomes crunchy when cooked. Woodear has a mild, earthy flavor yet boast a delicate forest aroma. Shredded Woodear mushrooms are thin, long slices or strips of the whole Woodear mushroom. Woodear mushrooms are believed to prevent heart disease and contain anticoagulant-type substances.
Soak or simmer the dried chips until they soften, and then rinse carefully to remove any grit. Woodear is often called for as an ingredient in pork recipes but can be used with most meat. Adding Wood Ear to Oriental soup gives the dish an authentic flavor and interesting texture. Make a wonderful cream pasta sauce with onions, garlic, basil and sliced Wood Ears. Try them in stir-fry and stuffing. Can be used in meatloaf, salads, sauces, soups, stews, risotto, and in burgers.
