CLOUD EAR

Description:

Cloud Ear mushroom is an ear-shaped fungus that grows on the dead branches of broad-leafed trees.  Resembling an ear with a ruffled edge, they are similar to Wood Ear mushrooms with the exception of their color.  Wood Ear mushrooms are black with a brownish - tan inner color, whereas Cloud Ear mushrooms are black with a slightly lighter shade of black as their inner color.  Cloud Ear mushrooms can range in size from 1 to 3 inches in diameter.  Cloud Ears have a delicate, mild flavor and soft velvet texture.  Also known as Black Fungus, Tree Ear, Wood Fungus, Mouse Ear or Jelly mushrooms.

Suggested Use:
These unique looking mushrooms are wonderful in stir-fry, stuffing, soups, stews, pilafs, and sauces. To reconstitute, place desired amount into a bowl, cover with hot tap water and let soak for 20-30 minutes.  Rinse and add directly to recipe that will cook for at least 25 minutes.  One ounce reconstitutes to 3-4 ounces.
