Description:
Mousseron Mushrooms, also known as Mushroom Scythe or Scotch Bonnett, are delicious small mushrooms from France. Commonly found growing in “fairy rings”, Mousseron are little more than 1 inch in diameter. Sporting a deep golden hue with lacy, deep gills and long delicate stems, Mousseron mushrooms have a full-bodied flavor with a soft and chewy texture like Boletes. The smell and flavor of a Mousseron is reminiscent of Porcini Mushrooms, almost nutty.
Suggested Use:
Mousseron mushrooms are a wonderful addition to stuffing or rice pilaf. Mousseron sautéed with onions and garlic is delectable with pasta, bean or rice dishes. Easily prepared, this mushroom is a delicious addition to your favorite soups, ragouts, or stews, as it bestows a definite, somewhat sweet taste. Mousseron mushrooms were traditionally added to the British Isles beefsteak and kidney pies.
To reconstitute, place desired amount in bowl, cover with hot tap water, let soak for 15 to 20 minutes. Rinse and add directly to recipe that will cook for at least 25 minutes. One ounce dry reconstitutes to 3-4 ounces.
