Description:

The Lobster Mushroom, is not a true mushroom, it is actually a parasitic fungus that grows on mushrooms, turning them a reddish orange color that resembles the outer shell of a cooked lobster. The color is almost luminous with a reddish hue and extremely rare in the edible mushroom world. As the Lobster mushroom grows, an irregular shaped cap forms above the stem, developing into many different shapes and sizes. The Lobster mushroom has a firm, soft texture and delicate nutty, earthy flavor. The texture of the Lobster mushroom makes it perfect for absorbing the flavors of a dish while offering a splash of color. Chieftain’s Lobster mushroom slices range from 1 to 3 inches wide.

The Lobster Mushroom derives its name from the reddish color of the mushroom. This Mushroom is a great addition to mushroom dishes because of its beautiful color which is rather unique in the edible mushroom world. The Lobster absorbs flavors of a dish well while adding eye appeal.

Lobster mushrooms are excellent for color and flavor in stir-fry, sauces and soups and great in baked dishes or sautéed slowly, then served with meat or tofu. Useful in cheese spreads, omelets, chowders, frittatas, and quiche dishes. This colorful mushroom can be substituted for any mushroom in recipes.

To reconstitute, place desired amount into a bowl, cover with hot tap water and let soak for 20-30 minutes. Rinse and add directly to recipe that will cook for at least 25 minutes.  One ounce dry reconstitutes to 3-4 ounces.
