Description:

Chanterelles are Funnel Shaped Mushrooms that are comparatively rare. Tapered at the base, the Chanterelle expands up and out like the petals of a flower as the cap is formed giving them a slight resemblance to the "Horn of Plenty". The cap can measure up to 6 inches across and has a mild somewhat fruity scent and flavor and brownish-gray color. Chanterelles grow in clusters under broad-leaved trees and are difficult to find among the leaf litter. Chanterelles are an uncultivated mushroom and are found in coniferous and hardwood forests of Northern climates. Also known as Golden Trumpet or Pfifferling mushroom.

Very sought after for their tender texture and flavor and are an uncultivated mushroom. They grow in clusters under broad-leaved trees and are difficult to find among the leaf litter. Chanterelles are found in coniferous and hardwood forests of Northern climates.

Chanterelles are popular for serving in soups, stews, sauces, egg dishes, or with poultry and pork. Chanterelles with their delicate flavor are delicious sautéed in butter with onions or shallots. The flavor of this mushroom is delicate and should be cooked with light seasoning so the flavor is highlighted and not overwhelmed.

To reconstitute, place desired amount into a bowl, cover with hot tap water and let soak for 20-30 minutes. Rinse and add directly to recipe that will cook for at least 25 minutes. One ounce reconstitutes to 3-4 ounces.
