Popular as a cooking ingredient throughout Europe and the Orient for centuries, the mushroom has recently received a great deal more attention here in the U.S. With literally thousands of varieties of this fleshy fungus, gourmet cooks have at their disposal a multitude of choices of flavors to enhance their cuisine. Dried mushrooms, besides being economical have a more concentrated flavor than their fresh counterparts. A smaller amount is needed for recipes. Special blend is a mild, yet rich and savory combination of Shiitake, Chanterelle, Morel, Porcini, Oyster and Bolete.

Sauteed with onions and layered on a thick veal steak or drowning in a rich, heavy cream sauce or tossed with a hearty whole grain salad, the Special Blend of mushrooms is versatile and delicious. Use this blend in stuffings, pilafs, rice dishes, pastas and cream sauces. The flavor compliments veal, white fish, poultry and pork dishes.
Recommended Preparation Instructions:
Wild mushrooms may have stones imbedded in their flesh. It is strongly recommended to reconstitute the mushrooms prior to use. To reconstitute, place desired amount into a bowl covered with hot tap water and let soak for 20-30 minutes, stirring often to dislodge stones. General rule, 1 oz. dry reconstitutes to 3-4 oz.
