Description:
Pleurotus Eryngii, or Ivory Portabella, is a variety of mushroom that grows in clusters and has a trumpet like shape. With a blunt cap and stout stem, the Ivory Portabella develops a thick, white flesh that is firm-textured and meaty from the base to the cap. Also known as Royal Trumpet and King Oyster. The Ivory Portabella is typically harvested when they reach a few inches in length but can grow to about 6 to 8 inches long. Mild in flavor and similar in taste to abalone. These mushrooms are dried and sliced.
This versatile mushroom can be braised, broiled, grilled, sautéed, or stewed to be added to soups, stews, sauces, pasta, vegetable dishes, meats, and seafood. Keep in mind it may take a bit longer for cooking since this is a meaty mushroom.
Substitutions: Matsutake mushrooms can be used as a substitute.
