Description:
Portabella Mushrooms are a delicious and versatile fully mature form of the White Button or Crimini mushroom.  When harvested young it is called Crimini or White Button mushroom, when harvested as a mature mushroom, with the gills exposed, it is called Portabella or Portobella.  Known in the U.S. as the “vegetarian meat”, Portabella mushrooms are used in a variety of meatless and vegetarian recipes.  The Portabella mushroom has an open, flat cap and is extremely large, round, and firm.  Ranging in size between 5 and 8 inches in diameter, this mushroom is excellent for grilling and broiling with its dense, meaty texture.  Since the Portabella is the elder of the species, its gills are fully exposed, which means that some of the Mushroom's moisture has evaporated.  Portabella mushrooms portray a delicious mild, woodsy flavor that enhances pastas, pizzas, salads, soups and burgers. 

Suggested Use:
Portabella Mushrooms can be used in chili, lasagna, polenta, stir-fry, soup, sauces, and omelette's.  Delicious and versatile, you can serve Portabella whole, sliced, grilled, baked, deep-fried or stuffed.  Their savory flavor compliments steaks, chops, poultry, seafood and grilled vegetables.  Portabella mushrooms are easy to prepare, use them in stews, couscous and casseroles. Marinate Portabella in red wine, garlic and herbs or brew them as a tea!  They mix well with cheese and meats and make a savory meat patty replacement for a burger.

Substitutes:  Crimini mushrooms, Matsutake mushrooms or Porcini mushrooms.
