Highly esteemed and almost as valuable as their darker cousin the Black Truffle, White Truffles have a loyal following among food lovers. Growing symbiotically with oak, hazel, poplar and beech trees, the White Truffle “fruits” in autumn. White Truffles can reach 12 cm diameter and their flesh is pale cream or brown with white marbling. The flavor of the White Truffle is fragrantly subtle with an earthy flavor. Specially trained dogs seek White Truffles out, digging them from the soil where they are buried. Use of hogs has decreased through the years since there is less risk of the dogs ingesting the Truffle when found. Chieftain’s White Truffles are from Italy.
