Description:

Mustard is one of the oldest known culinary and medicinal spices. The Chinese were using mustard thousands of years ago and the ancient Greeks considered it an everyday spice. Mustard comes from plants that produce tiny seeds, which are ground and mixed with vinegar, water or other liquids to make a condiment. In ancient times, mustard seeds were ground and added to wine to make an early version of table Mustard. All Mustards derive from three members of the cabbage family, Nigra produces Black Mustard, Juncea produces the Brown, and Alba produces the White. White mustard seeds are small, round, and beige colored and are much larger than the brown variety but less pungent. With its mild flavor and good preservative qualities, it is most commonly used in ballpark mustard and in pickling. Powdered mustard acts as an emulsifier in the preparation of mayonnaise and salad dressings and is also useful for flavoring barbecue sauces, baked beans, many meat dishes, and deviled eggs. Mustard has been used medicinally for epilepsy, toothache, bruises, stiff neck, rheumatism, colic and respiratory troubles.

Recommended Preparation Instructions:

Grind fresh before adding to most recipes, using a spice grinder or pepper mill. If toasted, allow to cool before grinding. Can be added whole to pickling recipes.
