Description:
Pine Nuts have been a delicacy in many cuisines for centuries. The eating of Pine Nuts dates back to ancient Greek and Roman times when they were commonly preserved in honey. Common as a food for Native American Indians of various tribes, Pine Nuts were also used in Latino, Mediterranean and Oriental cultures. Pine Nuts are also called Pignoli, Pinon, Pignon, Pignolia, Pignoli and pinhao. Pine Nuts are the edible seeds, which are produced from several varieties of Pine Trees. Small and elongated, the Pine Nuts grow inside the "Pine Cone" and to be released, the Pine Cone must be heated to loosen the Nuts. The seeds have a soft texture and sweet, buttery flavor when raw and after being toasted they have a slight crunch.  The taste of the Pine Nuts mellow with cooking.

Suggested Use:
Pine Nuts are delicious toasted and sprinkled on salads, combined with dried fruit in rice pilaf, or tossed with pasta.  Pine Nuts are a main ingredient in Italian pignolia cookies. Many dishes can be made with these delightful nuts, Cassata with strawberry puree, chicken with artichokes and lemon, fennel and escarole stuffing with Pine Nuts, pan-seared penne and greens with feta and Pine Nuts, and sausage, pepper, brie and Pine Nuts in puff pastry.
