Small Red Beans, also known as Habichuelas, and Habas Pequenos Colorados, are a plump, round bean with a deep brick red color. Small Red beans have a slightly mild sweet taste and firm texture and holds its shape well. Popular in Mexican dishes such as refried beans and chile and in Louisiana they are used to make the classic red beans and rice.

Substitutes: Pinto, Kidney or Adzuki beans.

Recommended Preparation Instructions:

Soak overnight before cooking. This bean has a fragile skin which will break open if the bean is boiled too hard, so simmer gently. Small red Beans will cook in about 45 minutes.

One cup dry yields 2-2/3 cups cooked.
