Wheat is one of the most well-known and nutritious grains. One of the world's largest cereal-grass crops, Wheat is second only to rice. Unlike other cereal grains, Wheat contains a relatively high amount of gluten, the protein that provides the elasticity necessary for excellent bread making. There are well over 30,000 varieties of Wheat, but the three major types are Hard Wheat, Soft Wheat and Durum Wheat. The unprocessed Wheat kernel is commonly known as a Wheat Berry. The Wheat Berry is made up of three parts, bran, germ and endosperm. Soft White Wheat Berries are from Spring Wheat that is grown in the South and Midwest areas of the U.S. Soft White Wheat Berries are lighter colored and have starchy kernels making them tender and better suited for sprouting and baked goods such as biscuits and cakes.

Start the day with a warm and healthy breakfast, cook Soft White Wheat Berries with raisins, tart cherries, or apricots and serve with milk!

Recommended Preparation Instructions:

Soak wheat berries overnight. Drain, cover with 3½ cups of liquid and bring to a boil. Reduce heat and simmer for 50 minutes. Drain if needed, fluff with a fork. For nuttier flavor, toast before soaking.

One cup dry yields 3 cups cooked.
