Description:

A premium Spanish rice for a successful paella, Calasparra, is a unique, centuries-old short grain rice that is grown in the mountains of a tiny town named Calasparra, located in the Spanish province Murcia. Here it is carefully cultivated and slow harvested in fresh mountain water irrigation. Its slow maturing process—30% slower than other rice—produces kernels that are exceptionally dehydrated, which allows for superior absorption of tasty sauces and flavors—more than 3 times its volume in liquid. Calasparra Rice was the first rice to be awarded with the Denomination of Origin, a guarantee of the finest quality.

Recommended Preparation Instructions:

Calasparra can soak up to 2-3 times the amount of liquid used for standard Spanish or Italian rice, making it more flavorful when it’s finished cooking.  That could be about as much as five to six parts liquid to dry rice. 

One cup dry yields a minimum of 3 cups cooked, depending on how much liquid is absorbed.
