MOCHI RICE
Description:
Mochi Rice is a short-grained Asian rice with a sticky texture and mild sweet flavor. The stickiness of this rice, from the high starch content, allows the rice to be packed together and formed into balls or squares for rice cakes or sushi. This traditional Rice of Japan is used most frequently to make rice cakes. To make the cakes, the cooked, hot rice is pounded over and over with a wooden pallet until it is pulverized. The resulting sticky dough is shaped into balls or cakes, then wrapped with Seaweed or filled with small pieces of meat or seafood. The flour made from Mochi rice is known as Mochiko Flour and is used to make crackers and rice noodles.
Suggested Use:
Mochi is often used to make confections, puddings, crackers, rice balls, rice cakes and rice molds and sushi.
