ROSE MATTA RICE
Description:
Rose Matta Rice is a sister rice to the Indian red rice (Red Matta). It is the same kernel but with the outer bran removed. The remaining kernel is then polished. Rose Matta Rice is pink hued, more of a washed down terra cotta color. The grains are short and plump and the flavor is delicate but nutty. It retains its pink hue when cooked. Excellent for seafood, you can enhance the flavor of this delicate rice by using aromatic herbs such as cinnamon, cardamom, cloves, fennel or cumin seeds. Rose Matta is an aromatic rice that takes about 30 minutes to cook fully.
Suggested Use:
Try making a spicy Thai broth and using it to cook the rice. A useful addition in any dish where you want color to enhance the presentation.
