Paprika is produced from peppers ripened to redness, sometimes called ‘pimento’, the same as used to stuff olives. These peppers are first dried and then ground into a fine powder. Drying them in an oak wood oven creates the unique flavor of smoked Paprika. The balmy quality is derived from a type of Pimiento that does not possess the intensity of the Hot Pimento. Originating in Southern Mexico, the plant used to produce Paprika has become an essential ingredient in both Hungarian and Spanish cuisines. Paprika is used as a coloring agent in foods and cosmetics and has been used as a supplement in feeding Flamingo’s in zoos to help them keep their pink plumage bright and beautiful. Paprika can be used for home-cured sausages, rich stews, grilled meats and savory sauces. Popularly used as a garnish for deviled eggs, Paprika spices and colors cheeses and spreads, is used in marinades and smoked foods.

Paprika is often used with egg dishes, poultry and shrimp yet is excellent in cream based sauces and soups. Since Paprika only releases its color and flavor when heated, sprinkling it over colorless dishes may improve their appearance but will do little for their taste. Paprika is an emulsifier, temporarily bonding with oil and vinegar to make a smooth mixture for salad dressings or sauces. Mix Paprika with the flour or breading mixture for chicken and other meats.
