Peppercorns are the fruit of a flowering vine that is dried and used as a spice or seasoning. Peppercorns are one of the most commonly used spices and have been prized for both flavor and use as a medicine. The spiciness of black pepper is due to its content of a chemical called piperine. The berries grow in grape-like clusters on the pepper plant and Black Peppercorns are fermented, dried Green Peppercorns. Displaying a sharp, aromatic flavor, the Black Peppercorns taste the most robust of all Peppercorns. Peppercorns were used by the Egyptians as part of the mummification process and have been used in ancient times to treat such illnesses as earache, gangrene, heart disease, hernia, indigestion, sunburn and tooth decay. Peppercorn accounts for 1/4 of all of the global spice trade, with India as the largest producer of the world's pepper in addition to Brazil, Malaysia, and Indonesia.
