CARAWAY SEED, BLACK / NIGELLA
Description:
Nigella, also called black Caraway, black cumin, or wild onion seed is a popular spice used for breads and vegetables. Long used in European cooking, Caraway seeds are sweet yet strong and have a pungent flavor suggestive of anise with a more peppery accent. Nigella or Black Caraway seed is smaller than traditional Caraway seed that is about 1/5inch long and tapered at the ends, carrying a more intense flavor. Caraway seed can be used in savory or sweet dishes. Used medicinally to cure a wide range of ailments including bronchitis, colds, fever, sore throat, infections and gingivitis, it can be chewed after meals as a digestive aid. Use in curries, yogurts and chutneys or add to salads, cottage cheese, and pickles.
Suggested Use:
Caraway, a popular ingredient in English Seed Cake, is used in other desserts as well. Widely used in German, Hungarian and Austrian cooking. Caraway seeds flavor potatoes, cheese, bread, cake, meats, vegetables and sausages. Caraway can be used in Piragi, Irish soda bread, Hungarian goulash, Sauerkraut, Russian cabbage and is also used to flavor cheese.
