In the Middle Ages, this highly valued, West African spice was termed grana paradisi “Grains of Paradise”. The seeds of this cardamom-like perennial plant are chestnut-brown and have a pungent, hot peppery taste. Commonly known as Guinea pepper, Melegueta pepper, and alligator pepper, this tiny seed is shaped like a pyramid. Grains of Paradise can be ground in a mill like peppercorns or may be used in the same way as cardamom.
