Description:

Originally from Cayenne in French Guiana, Cayenne Pepper is a member of the plant genus, capsicum, which includes the bell pepper, paprika, and green chilies.  The Cayenne Chile is a bright red chile that ranges from two to five inches long and about ½ inch in diameter.  Cayenne owes its hot flavor to a chemical called capsaicin, which comprises about 12% of the chile.  Cayenne is made from grinding both the flesh and seeds of the chile pepper and care should be taken when using this spice since a little goes a long way!  Cayenne pepper is a favorite ingredient in Cajun cooking, and the main spice in chili con carne recipes.  Full of health benefits, Cayenne has been used medicinally for thousands of years. Cayenne Pepper is a stimulant and wonderful healing aid for the digestive system since it acts as a catalyst and increases the effectiveness of other foods and herbs when used with them.  Traditionally used by herbalists to cure stomachaches, cramping, gas, varicose veins, and allergies.  Used to season foods and add a little zip to their taste. It is also a colorful garnish for egg dishes.  Add this fiery pepper to stews, soups, chilies, meats, dips, salsas, chutneys, jellies, and sprinkle some in your hot chocolate for a unique and delectable treat.

Suggested Use:
Cayenne is an appetizing accompaniment to salsas, dips, sauces, marinades, dressings, omelets, soups and stews.  Dress up your favorite barbeque sauces with a sprinkle of Cayenne Pepper.  This racy spice is used in a variety of zippy recipes such as fried squid; smoke mussel fritters, fries, chocolate cakes, puddings, stir-fry, and Mexican dishes.  Add to oils to make a rub for poultry and meats.
