Start by bringing the chicken stock and bay leaf to a boil then add the orzo cook for approx 7 min. or until orzo is al dente. Next remove orzo from heat and drain and wile orzo is still hot toss together with lemon and lime zest, shallots and thyme. Allow orzo to cool then toss with the remaining ingredients, season to taste.
