SUN DRIED TOMATOES AND PASTA
  • 8 oz. marinated sun dried tomatoes, recipe below...
  • 1 lb. pasta
  • 2 to 3 garlic cloves, minced
  • 1/4 cup diced onion
  • 3 tbsp. olive oil
  • 3 tbsp. parsley, chopped
  • herb(s) of choice; basil, thyme, oregano, rosemary
  • 1/2 c. Parmesan cheese

Marinade recipe

  • 3/4 cup red wine
  • 1/4 cup fresh basil leaves
  • 4 tablespoons olive oil
  • 4 cloves garlic, chopped
  • 2 teaspoons fresh ground black pepper
  • 1 teaspoon salt

Chop the marinated sun dried tomatoes. Mince the garlic and dice the onion. In a skillet, sauté herbs of choice with the garlic and onion in olive oil. Add the tomatoes. Sauté briefly and turn off the heat. Make the pasta according to package instructions. Toss hot pasta with the tomatoes. Top with Parmesan cheese. Garnish with fresh parsley. Serve hot.
