GABA RICE AND SPINACH SALAD 

 

  • 4 cups cooked GABA RICE
  • 4 cups fresh spinach, chopped
  • 1 tablespoon fresh mint, chopped
  • 3 teaspoons extra virgin olive oil
  • 2 tablespoons golden flax oil
  • 2 teaspoons rice vinegar
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1½ cups cherry or grape tomatoes, chopped
  • 2 tablespoons scallions, minced
  • 1 clove garlic, minced

In a small bowl, combine flax oil, rice vinegar and the lemon juice and set aside.  Heat olive oil in a large skillet and sauté scallions until soft but not brown. Add the spinach and toss until slightly wilted. Remove from heat and combine with cooked rice and tomatoes, add dressing and mix thoroughly.  Garnish and serve.
