BEANS WITH FRUIT AND ICE CREAM

  • 3 cups cooked, drained Beans (reserve liquid)
  • 1 cup dried apples, roughly cut
  • ½ cup raisins or currants
  • ¼ cup honey
  • ½ teaspoon cinnamon
  • 1 teaspoon lemon juice
  • Vanilla Ice Cream

Place the beans in a large saucepan and set aside. In a separate bowl, combine the apples and the raisins or currents with 1½ cups bean liquid, stand for 15 minutes. Then add to the beans along with the honey and cinnamon. Simmer for 8-10 minutes. Stir in the lemon juice and spoon over the vanilla ice cream.
